I had been taking rest since past 1 week due to poor health and was itching to get back to baking. That’s when i stumbled upon this new recipe on YouTube by Shivesh. The cookies looked really cute and it seemed quick and not that tiring. So, I thought why not?!
However, the guy in the video made it with Maida a.k.a All purpose flour and butter but i tried making it with whole wheat flour and ghee. Mainly because I’m out of butter (..and happen to have lots and lots of homemade ghee..) and mum keeps on insisting to avoid maida as much as possible. So, yeah it was quite and experiment but it turned out just fine.

Here’s my version of the cookies, which I like to believe is healthier:
Wet ingredients:
- 60ml hot water
- 4 – 8gms coffee powder (as per your taste, I made a mild flavor with 4gms)
- 110gms of soft ghee
- 55gms powdered sugar (as per your taste & yes, sugar is always considered as a wet ingredient when baking)
Dry ingredients:
- 125gms wheat flour
- 20gms cocoa powder
- 1 TSP cornflour (optional, add only if you like your cookies chewy and not crusty)
- 1 TSP baking powder
- A pinch of salt (only if you’re using ghee or unsalted butter)
Mix well both dry & wet ingredients till there’s no lumps and keep it in fridge for about 15-20 mins.
Take small portions from the dough, shape it like coffee beans and it’s ready.
Preheat oven at 200° and bake it for about 7-8 mins & 12-15 mins on 180°.
…& the cookies are ready!! Best served warm!
PS: Personally, I’m not a big fan of strong coffee flavor or dark chocolate flavor but my mum and brother happens to love it. My brother and sister-in-law both approved the cookies so, you all can give it a try.
