While World isn’t in as bad space as it was a year ago, India is not the same. I am not someone who reads news because it effects my mental health easily but these days, Social media is just the same. No, I’m not complaining. I’m actually happy how people all over India and outside India are trying to help. But no matter how much I appreciate people for doing something so remarkable, it gives me insight on how worse the situation really is. At times like these, It is very much necessary to try and protect your mental state. There are number of ways to keep your peace. One such for me is indulging into my sweet tooth. There was a time when I used to run on sugar, quite literally! However, things have changed in past few years. I no longer look for that big chocolate bar or cold drink bottle that often and It works just fine for me but sometimes, just sometimes when I feel overwhelmed I go back to my sugar.

Today, I had Mug Cake for breakfast and I don’t feel guilty about it. I’ll share my quick recipe with you all and I wish you too could feel that little happiness in midst of all the mess we are hearing, looking and feeling right now. Many of you will judge me for finding this little moment of happiness in a piece of cake, but I believe there’s nothing wrong in giving yourself a break once in a while.

After the first lock-down last year, I am pretty sure all of you will have these basic ingredients at home now.

Assuming not everybody has measurement cups at home, I’m writing this recipe in spoons. You can double the quantity if you want more.

  • 2 table spoon maida / all purpose flour
  • 1 table spoon cocoa powder
  • 1 table spoon sugar
  • 1/2 tea spoon Instant coffee powder (optional)
  • 1/4 tea spoon Baking powder (tea spoon, not table spoon)
  • 3 table spoon Milk
  • 1 table spoon oil (choose that doesn’t have smell)
  • 1-2 drops of Vanilla essence (it’s okay if you don’t have it.)
  • Chocolate chips / lightly roasted dry fruits (whichever is convenient)

Mix it well in a microwave safe cup and put it in for 120 to 150 seconds. My microwave has rating of 900 watts so it takes about 120 seconds but if you have one with higher watts, lessen the time.

Your cake is ready and you can top it with Vanilla ice cream if you want. I hope you enjoy making and eating this quick recipe. It is not as healthy as my other recipes but I hope it makes you happy.
